For a smooth jam, you can purée the apples with an immersion blender. For a chunkier texture, simply crush them roughly.
Add the jam sugar and bring to a rolling boil, stirring constantly, for three to four minutes. Add spices to taste.
A setting test is recommended. To do this, place a drop on a cold plate – if it sets, the jam is ready.
Pour the hot jam into sterilized jars, seal immediately, and turn upside down for five minutes.
