In a large bowl, combine the shredded aged cheddar and shredded smoked Gouda cheeses.
Add the mayonnaise and cream cheese to the bowl. Mix well until all the ingredients are thoroughly combined. Add the chopped roasted red peppers to the mixture and stir until evenly distributed.
Sprinkle in the onion powder and dry mustard. If desired, add a pinch or two of cayenne pepper for a little kick. Mix everything together until well combined. (You can also use an electric mixer if you prefer.)
If you prefer a milder flavor, add the dried parsley and stir it into the dip. This step is optional and can be skipped if you wish.
Once the dip is well blended, cover the bowl with plastic wrap or transfer it to an airtight container. Refrigerate for at least 1 hour, and preferably overnight, to allow the flavors to meld.
Before serving, quickly stir the dip to ensure it's well combined. If desired, garnish with additional chopped roasted red peppers or a sprinkle of parsley.
Serve the pimento cheese dip with your favorite crackers, tortilla chips, or vegetable sticks. Enjoy!
